being able to control the exchange would mean monopoly, which is not a good thing. But it's basically how companies trade, only companies can trade non-currency on it, not people, the exchange covers currency, public shares, and general resources like grain, the ask is what a seller wants for a single unit of the good in question, while the bid is what a buyer is willing to pay, as such the Highest bid and highest ask never overlap, as that would quickly be resolved by the systems of the exchange.
if you want to participate In the exchange then you need to make a company, go to the items part after someone works at the company and press the sell on the exchange, then the price will be set at the last price where goods were exchanged at, and then you need to input the amount you want to sell, and press the blue button at the bottom, if someone is willing to pay more than you set for what you want for such goods, then it will automatically sell the goods sent to the exchange.

It cannot be controlled that well especially with a low net worth. I do trade it though and hopefully, slowly, the bids and asks will equalise to the point where there is something to work with.
Real world markets move because of people making losses because people have safety features and price tends to take the money from that, generating moves. However this market will primarily just range between certain prices, unless an event occurs changing the supply and demand which will temporarily cause prices to change.
I have 2 investment companies but one issue is that net worths do not calculate the money reserved for orders, or the value of anything you make asks for. Although this is easily calculated it can be annoying. Also debts do not affect net worths and companies cannot go below 0.
I have no idea why I wrote all that, just placing bids and asks and producing whatever yields the most profit. Or trade the difference between the bid and the ask, or the difference between current price or what you think is the fair price.
Just make sure anything you produce is at a profit, else it is simply not worth it.
